Punjabi Karhi!!!

Ingredients:
2-3 cups yogurt
1 1/2 tbsp gram flour (Besan)
1 big onion sliced
1 potato (optional) sliced
asafoetida a pinch
1 tsp jeera
1 tsp garam masala
1tsp dhania powder
1/2 tsp red chilli powder
1 tsp ginger garlic paste
5-8 leaves of karhi patta
2 dry red chillies
3 green chillies
1 tbsn oil
turmeric powder 1/2 tsp
Methi Dana ( Methi seeds) or Fenugreek Seeds 1 tsp
Kasoori Methi ( 1 tsp)
salt to taste
For Pakoras
1 onion
1 potato
2 green chillies
salt to taste
1 cup gram flour
1/2 tsp red chilli powder
1/2 amchur powder
water to make a batter
oil for fry.
Chopped Green Coriander 1 tsp
 
Instructions:
1. Take a glass bowl and mix Besan and Yoghurt with some water.
2. Heat oil in a big vessel, add methid dana, asafoetida, jeera, karhi patta and dried red chiilies.
3. Add ginger and garlic paste.
4. Add onion and potatos.
5. Cook them till they turn light brown.
6. Add haldi (turmeric) and salt and red chilli powder and add the mixture of yogurt and gram flour prepared in step 1.
8 Add 6 cups of water.
9. Stir continusously till one boil .
10. Add the Garam Masala and Dhania Powder in this mixture.
10. Reduce the flame and let it cook for at least half an hour.
11. Note that the consistency of the liquid should be lsimilar to tomato soup.
12. You may need to add some more water , if it is thicker and let it cook for some more time.

Recipe of Pakoras
1. Chop onions, potatos and green chillies, kasoori methi..
2. Add some salt, some Garam Masala ( 1/2 tsp).
3. Add 3 tablespoon Besan.
4. Mix all the ingredients and make a smooth batter.
5 Heat oil for deep frying and make small round shape pakoras and fry them.

Once the pakoras has cooled down add these pakoras in the Karhi which you prepared.
Garnish it with chopped coriander.

Serve it with rice or Roti.

Note:- For Karhi never use fresh yogurt ( sour yoghurt is prefered).
You may also add some Amchur ( Dry Mango Powder) or some lime juice ,if the yoghurt you used was not very sour.
Special Garnish Tip:
Take 2 teaspoons of Ghee or Oil in a small fry pan, heat the oil and add 1/2 tsp of red chilli powder in it and heat it for a minute ( do not let the chilli burn). Pour this oil on the top of karhi while serving.
